Easy Peasy Chocolate “Mousse”

I generally don’t like to follow recipes. I look up recipes and use them for inspiration, but then I always try to give it my own twist. My mind always starts to drift off and think about changes that I can make. One of the things that I love about cooking and preparing dishes is that you can taste your food along the way and still tweak things. A bit trickier with baking as it is more of an exact science. This is why I found myself more often with failed baking experiments because I was too stubborn to follow the recipe.


As this dessert doesn’t involve actual baking (or cooking), there is no need to follow the exact quantities. Just make sure to taste as you go and make it exactly to your liking!


Bonus to this chocolate “mousse”... It is a very tasty dessert with no added sugar and it’s a lot healthier than your regular chocolate mousse. The smoothness of the avocado adds a light texture, the banana adds sweetness and the cocoa gives you this rich chocolate flavour. I promise that eating it will be a surprising delight!


Ingredients

Makes roughly 4 portions.

  • 2 avocados

  • 3 to 4 ripe bananas

  • 1 to 1.5 tbsp unsweetened cocoa powder

  • 1 tsp honey or maple syrup (optional)

  • Salted pistachios


Method

  • Peel the avocado and bananas. Start with three bananas and two avocados.

  • Blend the banana, avocado and one tablespoon of cocoa until you have a smooth mixture.

  • Taste your mixture. Add more cocoa to make it richer in chocolate flavour or more banana to make it lighter.

  • You can add a teaspoon of honey or maple syrup to sweeten it if you like.

  • Keep blending and tasting until you are happy with the result. Then scoop the mix into small bowls or ramekins and serve with some chopped salted pistachios sprinkled on top.
